Our teas are made to be infused many times. If I choose to infuse it only one or two times, I will rinse the leaves first with fresh water to awaken them.


I find the second infusion often the most subtle and the most expressive. For my green tea, I use 1,5 gr in a Gaiwan (100ml), for 1 minute with 75-80C water. I reinfuse a few times increasing the length of infusion or the water temperature. If I use a french teapot, around 500 ml, I will go for 3 grams, 4 minutes with water at 70C. For my black tea, I take 3 gr in a Gaiwan, with 95C water and for 1 minute. I reinfuse at least 10 times, increasing the water temperature or/and the steeping time.


I will also allow space for my own intuition and be present, to adapt each experience into what I want in the current moment.”
